If the front door is a standard 6 8 tall you have a little over a foot to the top of the coffering.

Today however not uncommonly most ceilings are 9 or even 10 feet in height.

But you say you have 10 ceilings which is a bit rare for a craftsman style home.

As a 5 11 woman living in a home with high victorian ceilings i will be flipping this advice on its head.
So if you have 9 foot walls then 3 foot or 36 inch wainscoting.
Taller wainscoting applications are typically placed at two thirds the height of the wall.
For example if your walls are 9 feet tall cap the wainscoting at 6 feet with the thickness of a plate rail figured in if needed.
The more the height of wainscoting the lower the ceiling looks.
Makes every room look bigger.
I think those ceilings are 8.

We had 9 5 foot ceilings.
Start by measuring the wall width and wainscoting height.
If you live in a space with 8 foot ceilings don t despair.
That would be plate rail height and would look great with 8 ceilings in a standard size room.
Always the height of the wainscoting will make the ceiling look shorter.
So never and issue with furniture going through them.
